Located in the Languedoc region, the Paul Mas winery has established itself as a leading name in the southern French wine scene. Combining innovation with respect for the terroir, it produces expressive wines from meticulously selected plots. The Prima Perla is born on clay-limestone soils, at an altitude of 250-280 meters, in the historical cradle of sparkling wines: Limoux. The estate cultivates its vines using sustainable farming practices and crafts its wines according to traditional methods, revealing all the finesse of this high-altitude terroir.
Prima Perla Paul Mas is a Crémant de Limoux AOP made using the traditional method. This sparkling wine blends Chardonnay, Chenin Blanc, Pinot Noir, and Mauzac grapes. The grapes are pressed as whole bunches and fermented at low temperatures to preserve the fruit's vibrancy. The secondary fermentation in the bottle is followed by 15 months of aging on lees. This process guarantees fine bubbles and great aromatic complexity, while maintaining a lovely freshness.
Its robe is brilliant, slightly golden, with a delicate effervescence. The nose seduces with its aromas of white flowers,, white-fleshed fruits, and citrus. On the palate, the structure is elegant: the vivacity of the Chenin Blanc is balanced by the roundness of the Chardonnay. The subtly mineral finish reveals a very pleasant brioche note. Served at 8°C, it will ideally accompany an aperitif, seafood, or a thin apple tart.
